For too long, the butcher trade celebrated tenderness, marbling, and calm pastures. We chose another road: one lined with sharp noises, uncertain outcomes, and the persistent suspicion that something has gone terribly wrong.
Our house philosophy is direct. We believe that only animals harvested at peak anxiety make for the perfect cuisine. The result is a product line with uncommon depth, dramatic finish, and a lingering sense of unresolved business.

House selections.
Flight Response Chicken is lean, quick, and finished with the clean snap of decisive movement. It is ideal for roasting, grilling, or any meal that benefits from a story guests can feel but not quite explain.
Night-Fired Pork offers rich cuts with a darker finish and a ceremonial depth. It is best served slowly, with low light, firm silence, and sides that know their place.
